Chef Nieves Barragán to Open Legado in London, a Celebration of the Diversity of Spanish Gastronomy

The new restaurant will showcase recipes from across Spain, from the hearty stews of the North to the tapas perfectly paired with Jerez in the South

Michelin-starred chef Nieves Barragán, in collaboration with JKS Restaurants, is set to launch her latest venture, Legado, in Shoreditch this summer. The highly anticipated opening marks her second restaurant following the success of Sabor, which earned a Michelin star in 2018.

With over two decades of experience shaping Spanish cuisine in London, Legado—meaning "legacy"—is a deeply personal project for Barragán. 

A menu that encompasses Spanish diversity

The restaurant will highlight the rich diversity of Spain’s regional culinary traditions, drawing —such as jamón ibérico, or mojama (salted cured tuna)- may be paired with dry Fino or nutty Oloroso Jerez wines just as it happens in the lively tabancos (a hybrid of tavern and wine market) from the South of Spain. The menu may also feature the whole-animal cookery of Castile-León, with traditional roasts like lechazo (milk-fed lamb) or cochinillo (roast suckling pig), slow-cooked to perfection. 

Galicia’s seafood-rich coastline would also be represented in the menu with prime products as percebes (gooseneck barnacles), navajas (razor clams), or mejillones (mussels). Meanwhile, Asturias’ renowned stews may be represented with comforting classics like fabada asturiana (a rich bean stew made with fabas (beans from Asturias), morcilla (black pudding), pork fat and chorizo.

More ambitious in scale than any of her previous projects, Legado will serve as a creative space for Barragán and her team, allowing them to continue exploring and evolving Spanish gastronomy.

“It has always been my greatest pleasure to cook food from my country, but there are still many more stories to tell about the dishes and flavours that I haven’t found outside of Spain,” says Barragán. “Legado is a kind of playground for me, and I am excited to share my memories and discoveries of food and drinks – I hope everyone will enjoy.”

A dazzling career

Prior to opening Sabor, Barragán made significant contributions to London's Spanish dining scene as the executive chef at Barrafina (a certified Restaurants from Spain restaurant), where she oversaw the launch of two additional locations and earned a Michelin star in 2014. She departed Barrafina in 2017 to establish Sabor, also a Restaurants from Spain certified restaurant, which opened its doors in October of that year, earning a Michelin star in 2018.

Located on Heddon Street, Sabor—meaning "flavour" in Spanish—offers diners a journey through Spain's culinary landscape, featuring distinct areas such as the Counter, Bar, and El Asador. Each section provides a unique dining experience, with dishes reminiscent of Galicia's seafood restaurants and Castile's asadors, including cochinillo or pulpo octopus cooked to perfection in copper pans.

Set to open in late summer, Legado will offer London diners a fresh perspective on Spain’s culinary heritage, cementing Barragán’s legacy as a pioneer of Spanish cuisine in the city.
