Cut the cheese into regular-sized pieces. Beat the eggs lightly in a bowl. Dip a piece of cheese into the egg, cover it with breadcrumbs and then set aside. Repeat with the rest of the cheese. Heat a generous amount of Spanish olive oil in a frying pan and fry the cheese in small batches. The Spanish olive oil must be very hot so the cheese turns golden in a few seconds. Serve hot.
